Peach and Brie Cheese, mmmmm!

So you’ve got people coming over this evening and you have just realized that you don’t have the time to make an appetizer. Not to worry! The peach and brie puff pastry is the easiest and quickest appetizer you can make, plus it happens to be delicious. It also only has 4 ingredients, so you really can’t beat that!

Ingredients:

2 peaches

1 round of brie cheese

1 sheet of puff pastry

1 egg – beaten

Directions:

1) Cut the peaches into slices

2) Roll out a phyllo sheet so that it is big enough to wrap your brie cheese. Cut the brie cheese in half and place the bottom half of the round in the middle of the puff pastry.

3). Place your cut peach slices on top of one half, place other half of brie cheese on top of the cut peach slices and then add more peach slices on top. Option: drizzle honey on top of your peach slices.

4) Wrap up the “goodness” in the puff pastry and twist the excess pastry at the top to seal it all in. Using a pastry brush, cover your puff pastry masterpiece in the beaten egg.

5) Voila! In the oven it goes. (Oven at 350 for approximately 15-20 minutes or until puff pastry turns brown).

Nikki is the owner/director of Seasons Family Centre. She completed a diploma in photography at Fanshawe College, followed by a degree in psychology at the University of Western Ontario. Shortly after she finished a post-graduate diploma at the Toronto Art Therapy Institute. She is a Registered Canadian Art Therapist. Over the next few years she extended her education through various courses in psychology, counselling and play therapy at George Brown College, Hincks Delcrest and Cross Country Education. For the past several years Nikki has been running art programs all across the city of Toronto at various schools, community centres, libraries and private homes. She also runs play therapy groups at Thorncliffe Neighbourhood Offices as well as private art therapy sessions. Nikki has taken several courses in baking and cake decorating through the Wilton certification program.
