Apple Scones and Coconut Cream

 Another gluten-free winner! I’m really enjoying experimenting with all these recipes, some definitely don’t pass the taste test but the ones that do are worth sharing. Ingredients 1 cup minced apple 2 cups almond flour  1/4 cup shredded coconut  1 tablespoon cinnamon  1 teaspoon baking soda pinch of sea salt 1 egg at room temperature 2 tbsp of honey  Instructions Preheat oven to 375 degrees F (190 Celsius) In a large bowl, combine almond flour, apple, shredded coconut, cinnamon, baking soda, and sea salt In a smaller bowl mix the egg and honey until well blended Add the wet ingredients to the dry and mix well Knead the dough with your hands if necessary to ensure an even distribution of ingredients Form dough into 2 circles approximately ½ inch thick Cut each circle like a pizza into 6 or 8 slices depending on the size you want your scones Transfer to a baking sheet  Bake for 10 minutes or until golden brown.  Coconut cream  2 cans of coconut milk (chilled in fridge overnight)  1 tbsp …

Mini Cakes 

Our last few posts have focused on “healthier recipes”, and so now for something completely different! On Sunday we hosted another one of our mini cake workshops and it was a big success. We’re sharing the recipe for the cake and icing we used. If you’re interested in making a mini cake, simply cut 2 small pieces (equal in size) from the larger cake. Put icing between them like a sandwich and then mask the entire cake. We covered our mini cakes in fondant after that and decorated them. Traditional White Cake Ingredients 2 ¾ cups of sifted cake flour 4 tsp of baking powder ¾ tsp of salt 4 egg whites 1 ½ cups of white sugar ¾ cup of butter 1 cup of milk 2 tsp of vanilla extract 1 batch of royal icing fondant Directions 1. Guilt Free Chocolate Chip Cookies

   Since I’m technically on Mat leave right now I’m enjoying lots of time recipe testing in the kitchen. I’ve been experimenting with all sorts of “guilt-free” baking. These chocolate chip cookies are light, fluffy and pretty delicious for having no sugar!  3/4 cup almond butter 2 tbsp coconut oil 2 tbsp unsweetened shredded coconut 2 tbsp of molasses  2 tbsp of cocoa  2 eggs 1/4 cup of coconut flour 1/2 tsp baking soda 1/4 tsp salt 1/3 cup unsweetened, dark chocolate chips Preheat oven to 350 and line a tray with parchment paper. Mix almond butter, cocoa, molasses and coconut together in food processor. Add eggs, coconut flour, coconut oil, baking soda and salt. Stir in chocolate chips. Using a spoon, scoop out dough and form into balls, flatten them onto your baking sheet. Note, the dough will be sticky. Bake for about 10-15 minutes.    

Raw Coconut Bars

So now that I’m not pregnant, I have no excuses for my terrible eating habits, I can’t justify having chocolate right before bed anymore. I’ve tried to eliminate refined sugar from my diet but find that I’m still craving something sweet at the end of meals. I came across these bars on Pretend Health Freaks and thought I would give them a shot. I altered some of the ingredients since I didn’t have them on hand, they turned out delicious! I made them with the 3 cups of shredded coconut in the middle layer however, I would recommend only using 2 cups as it’s just a tad too much coconut. DIY Sweet Tables!

For the past few events we’ve hosted here, we’ve supplied sweet tables. Not only are they fun to make but they are always very well received. There are five basic steps you should follow when trying to make your own sweet table. 1) Decide on a theme and colour. Ours are sometimes based on a holiday which makes it easy for theme selection. There are so many free printable available on the web that you can match your colour/theme to them. For example for the circus theme I found this adorable circus template. The little signs really take your sweet table to the next level. 2) Decide on the type of candy you want. There are so many different types of candy out there, it can be overwhelming just to decide on what kind to get. The candy can be separated into four kinds. How to Host the Perfect Fairy Party!

Is your little one obsessed with fairies? We recently hosted a birthday party for a little girl who picked fairies as her theme. We had so much fun creating her birthday and think it would be an easy party for anyone to recreate in your home. For the decorations we bought strands of fake flowers from the dollar store. We also printed out a little saying we came across, which matched our theme perfectly. All you need is Faith, Trust and a little Fairy Dust! Loot Bags: For the loot bags we made little jars of fairy dust. We bought mini glass jars from the dollar store and covered them in clear tape just to be extra cautious. We filled each jar with water a few drops of glycerin and lots of sparkles. We then hot glued the cork back into the jar to prevent spilling. We tied a purple ribbon around the jar so that it could be worn as a necklace. We also made fairy cookies, the sky is the limit on how …

Paleo Chocolate Muffins (aka sugar/dairy free muffins)

My husband has decided to try the paleo diet, which is all great, minus the fact that I’m 8 months pregnant and all I want is carbs, carbs and more of them! In all honesty though I am enjoying trying out the recipes and came across this little gem the other day. Paleo Chocolate Muffins INGREDIENTS 2 ripe bananas, mashed (about 1 cup) 2 eggs 1 teaspoon vanilla extract 1/3 cup coconut oil – melted 1 tablespoon maple syrup 1/3 cup coconut flour 1/2 teaspoon baking soda 1/4 teaspoon sea salt 1/4 teaspoon ground cinnamon 1/3 cup dark chocolate, finely chopped (85% cacao and higher) Combine wet ingredients then add the dry ingredients. Place heaping spoonfuls in muffins cups and bake for 20 mins at 350.

Spaghetti Bolognese

Our teen cooking class made this a few weeks ago and not only was it super easy it was also delicious. Plus, if you make a big enough pot, there are lots of leftovers, and this is the kind of pasta that tastes even better the next day! Ingredients • 2 medium onions • 2 cloves of garlic • 2 carrots • 2 sticks of celery • olive oil • 2 heaped teaspoons dried oregano • 500g good-quality minced beef, pork, or (even better!) a mixture of the two • 2 x 400g tins of chopped tomatoes • sea salt and freshly ground black pepper • a small bunch of fresh basil • 100g Parmesan cheese • 400-500g dried spaghetti Directions Peel and finely chop the onions, garlic, carrots and celery. Place a large pan on a medium to high heat and add 2 lugs of olive oil, the oregano and the vegetables. Stir every 30 seconds for around 7 minutes or until softened and lightly coloured. DIY crafts for you!

One of my New Year’s Resolutions was to waste as little as possible, in regards to everything, especially food. I’m trying very hard to stick to it but at times it can be difficult. I was so glad I had saved all of past holiday decorations because this past weekend we hosted a birthday party with the fabulous theme of the “holidays”. The focus was on: Halloween, Christmas, Hanukkah, Valentine’s Day, Easter and Canada Day. I had so much fun coming up with the craft and wanted to share. The great thing about this craft, is you could do it at any of the holidays. All materials were bought from the dollar store, making it a very budget friendly craft! Materials: boxes pipe cleaners foam cut outs from various holidays cotton balls glue, scissors, hot glue, markers sparkles and stickers As you can see, the favorite holiday was Easter, I think it may have had something to do with how cute the little duck was and perhaps everyone longing for warmer weather!
